Build standalone vm images

Is there information describing how to go build a standalone vm image? I am specifically interested in how would I build an ESXi OVA similar the ones built for iperf, cassandra.
Any help would be great - so far all I can get is capstan to build vmw or a vbox file but cannot figure out the next steps to get to a standalone ova build.
