I heard that Apple would add Cantonese to it's translation app in iOS27. I have updated to iOS27 but there is still no Cantonese option. Has it not been released yet or is there some other way to activate it?

Where exactly? I don't think that was included in the list of new features published by Apple in June.

In the meantime, try Google Translate.
